Biryani is a fragrant Indian rice dish made by layering seasoned basmati rice with marinated meat, vegetables, and aromatic spices. The rice is cooked gently so each grain stays light and separate, while the layered ingredients create a rich and balanced flavor.

- Rinse the basmati rice until the water runs mostly clear. Soak it in water for 20–30 minutes.
- Mix the meat or vegetables with yogurt, ginger paste, garlic, biryani masala, turmeric, chili, cilantro, and mint. Let the mixture marinate for at least 30 minutes.
- Heat oil or ghee in a heavy pot and cook the sliced onion until golden. Set some aside for layering, then add the marinated mixture and cook until the outside is lightly browned.
- Boil plenty of salted water with cumin, cardamom, cinnamon, cloves, and bay leaf. Add the soaked rice and cook until it is about 70% done, then drain.
- Layer the partially cooked rice over the masala. Top with fried onions, cilantro, mint, and saffron mixed with a little warm water.
- Cover the pot tightly and cook over low heat for 20–25 minutes. Turn off the heat and let it rest for 10 minutes before gently fluffing the layers.
Tips for Flavorful Biryani
Use aged basmati rice if available and avoid overcooking it before layering. The rice should still have a slight bite because it will finish cooking during the covered steaming stage. Keep the heat low during the final cooking so the bottom does not burn while the flavors develop.
